Viewing and Editing DataSet Order and Formats

Is there any current way to edit and/or modify existing DataSet parameters at this moment?

I have wanted to do so many times in the past, but never found a way, and i usually ended up re-creating the datasets in question...

There are various ways of adding/removing symbols and modifying the name of a DataSet. Why (or what else) would you like to modify in a DataSet?

I mean the order of the fields. If I, for example, set columns for High as WL's Low and vice-versa.
Or the number of columns, in case I update the data with a new field.

Based on your description, that's most likely ASCII Data. If that's the case, you might use the handy "Copy format..." feature. Start creating a new DataSet as usual (point to the folder, select bar scale) but next instead of manually specifying the settings, just select the "Copy format from a DataSet" option and point it to your existing DataSet.

This way, the only thing that's left is to rearrange the columns in proper way. Sure you can deal with raw XML files contained in the DataSets folder under %AppData% in your favorite XML editor, but that's not nearly as convenient and intuitive.
